Baked Blueberry French Toast

It’s the Italian bread that makes this recipe unique!


• 1 loaf Italian bread
• 2 cups fresh or frozen blueberries
• 8 oz. cream cheese
• 12 eggs
• 2 cups of milk
• 1/3 cup of maple syrup
• 1 cup water
• 1 cup sugar
• 2T corn starch

Directions (start the night before):

1. Spray 13 x 9 baking dish
2. Break Italian Bread into small cube-size pieces (minus the crust)
3. Place 2/3 of bread cubes in bottom of baking dish
4. Sprinkle 1 cup of blueberries over bread
5. Cut cream cheese into 1 inch cubes and place over bread and blueberries
6. Top with remaining bread cubes
7. Mix together 12 eggs, 2 cups of milk, and 1/3 cup of maple syrup
8. Pour mixture over bread in baking dish, cover and refrigerate overnight
9. Remove from refrigerator 30 minutes prior to baking
10. Preheat oven to 350 degrees
11. Bake covered for 30 minutes. Uncover and bake 15 more minutes or until center is set and top is golden brown
12. Meanwhile, heat 1 cup water, 1 cup sugar, and 2T corn starch on stove until bubbly, cook 3 minutes
13. Add 1 cup of blueberries and cook until berries burst and syrup thickens slightly – pour over baked bread when served
