Yam Sausage


  • 1 lb. ground pork sausage
  • 6 oz. yams, cut into ¼” cubes
  • ¼ tsp. black pepper
  • 1 tsp. rubbed sage
  • A dash of ginger
  • A dash of nutmeg
  • ½ tsp. salt
  • ½ tsp. dried thyme
  • ½ tsp. cayenne pepper
  • 1 tsp. granulated garlic
  • 2 Tbsp. chopped parsley
  • 3 oz. iced water


Spread the cubed yams on a cookie sheet and quick-freeze.  Combine the rest of the ingredients (without yams). Mix well with your hands (just like mixing ground meat for meatballs).  Fold in frozen yams and make patties.  Cook in skillet or oven until brown.
